Gas mark 7 is the roasting setting: potatoes that need to go properly crisp, a joint that wants a hard start, pizza, and the opening blast that gives bread its crust. Note the ladder widens here — the jump from gas mark 6 is 20 °C, twice the step you get lower down the dial.
