Gas mark 2 is a cool oven — slow-cooked casseroles, pulled shoulder, confit, overnight beans and the low end of meringue baking. Nothing browns quickly here; the point of the setting is time rather than heat, and recipes that use it usually run for hours.

Yes — gas mark 2 and 150 °C are the same setting, equal to 300 °F. British recipes describe it as a cool oven.

What is the difference between gas mark 1 and gas mark 2?

Ten degrees: gas mark 1 is 140 °C and gas mark 2 is 150 °C. At these temperatures a 10 °C difference changes the timing noticeably over a long cook, even though it sounds small.

What is gas mark 2 in a fan oven?

Set a fan oven to 130 °C. For slow cooking, many ovens hold low temperatures poorly, so an oven thermometer is worth more here than anywhere else on the dial.
