Is light and dark brown sugar the same weight?
Yes, both are about 220 g per packed cup. Dark brown sugar has more molasses, which changes the flavour and colour but not the packing density in any meaningful way.
Can I substitute white sugar for brown sugar by weight?
By weight, yes — use the same gram figure. But you lose the molasses, which contributes moisture and acidity. Adding a tablespoon of molasses per 200 g of white sugar recreates it closely.
