Classic Apple Pie

Ingredients

  • 320 gall-purpose flour
  • 5 gsalt
  • 15 ggranulated sugar
  • 226 gcold unsalted butter, cubed
  • 120 mlice water
  • 1.1 kgtart apples (Granny Smith), peeled and sliced 5mm thick
  • 150 ggranulated sugar
  • 50 gbrown sugar
  • 30 gall-purpose flour
  • 5 gground cinnamon
  • 2 gground nutmeg
  • 1 gsalt
  • 15 mllemon juice
  • 30 gcold butter, cubed
  • 1egg, beaten
  • 15 gcoarse sugar

Instructions

  1. Mix flour, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs. Add ice water gradually, mixing until dough just comes together. Divide in half, flatten into discs, wrap and refrigerate 1 hour.

  2. Toss sliced apples with both sugars, flour, cinnamon, nutmeg, salt, and lemon juice. Let sit 15 minutes.

  3. Roll one disc into a 30cm circle. Fit into a 23cm pie dish. Roll second disc for top crust.

  4. Fill bottom crust with apple mixture. Dot with butter cubes. Cover with top crust, seal edges, and crimp. Cut 4-5 slits in top. Brush with beaten egg and sprinkle with coarse sugar.

  5. Preheat oven to 220°C. Bake 20 minutes, then reduce to 190°C and bake 40-50 minutes more until crust is golden and filling bubbles. Cool completely before slicing.
